Cilantro pesto



1 large bunch cilantro, washed with stems removed
2 Tbsp lemon juice
2 Tbsp oil
2 cloves garlic
salt

Mix all ingredients in blender. Pulse until smooth. Freeze in ice cube trays until ready to use.

Serving suggestion: Toss 1 tsp cilantro pesto with cool spaghetti. Top with shredded Gouda or other cheese of your choice.

  1. Yu-mmy! Question for ya: if one can't easily find gouda, what is a comparable cheese? is it a hard cheese? a strong cheese? I tried looking it up and became more confused. You are in the Cheese Capitol of the World, after all.
