Quick fresh tomato sauce for pasta


4 large, ripe tomatoes, chopped
1 clove garlic, crushed
1 Tbsp olive oil
salt
lots of freshly cracked black pepper
rounds of goat cheese (optional)
fresh basil

Heat the olive oil in a skillet over medium heat. Cook the garlic gently for 2 minutes. Add tomatoes and cook for five minutes. Season with salt and pepper. Serve over hot pasta with fresh basil and goat cheese.

Oh yes! I will be making this today! I have fresh tomatoes, fresh basil (that I grew myself...trust me this is a major accomplishment!), all I'm missing is the fresh garlic, which is easily remedied. I think I will eat mine over spaghetti squash. YUM! Thanks for sharing!
